Strawberry milkshake cake

Ingredients

For the cake
500ml strawberry milkshake (Benna)
2 tbsp butter (Benna)
2 eggs
175g caster sugar (Lamb brand)
120g plain flour (Lamb brand)
1 tsp baking powder (Lamb brand)
Pinch salt

You will also need
500ml fresh cream (Benna)
1 tsp vanilla extract
1 tbsp icing sugar
1 box fresh strawberries, hulled and sliced
3 tbsp toasted flaked almonds

Method

Place 120ml of the strawberry milk shake and the butter into a saucepan and heat together to melt the butter. In a bowl, beat together the sugar and eggs till light and fluffy. Stir in the milk and butter mixture. Next, in a bowl sift together the flour, baking powder and salt and fold into the cake batter. Pour into a lined 8” square cake tin and bake at 180`c for 25-30 minutes. Allow to cool down completely. Use a skewer to make holes in the cake and pour over the remaining 380ml milkshake in 2 intervals, allowing to soak up in between. Refrigerate for 1 hour. Meanwhile, whip together the fresh cream, vanilla and icing sugar to soft peaks. Spoon over the soaked cake, arrange the sliced strawberries on top and sprinkle over the toasted flaked almonds.
