Oat and Almond biscuits with pistachios and white chocolate

Ingredients

115g unsalted butter (Benna)
115g caster sugar (Lamb brand)
85g brown sugar (Lamb brand)
1 egg, beaten
Few drops almond extract
80g ground almonds (Lamb brand)
80g plain flour (Lamb brand)
1 tsp baking powder
130g rolled oats (Lamb brand)
60g chopped pistachios (Lamb brand)
40g white chocolate chips (Lamb brand)
You will also need extra chopped pistachios to decorate

Method

Beat together the butter and sugar till light, then mix in the beaten egg and almond extract. Add in the flour, ground almonds, baking powder, oats and salt and mix well. Finally, mix in the chopped pistachios and chill the mixture for 20 minutes. When ready, form into small balls and place onto lined baking sheets spaced apart. Flatten down, sprinkle over the remaining white chocolate chips and bake at 190`c for 9-10 minutes only.
