Savoury breakfast muffins

Ingredients

350g plain flour (Lamb brand)
2 heaped tsp baking powder
2-3 tbsp chopped fresh chives
2 eggs, beaten
60g salted butter, melted (Benna)
300ml milk (Benna)
1 tbsp Dijon mustard
120g grated cheese (Cheddar, Parmesan)
2 tbsp chopped fresh basil
6 slices prosciutto
1 tbsp sesame or pumpkin seeds

Method

Start this recipe by mixing together the flour, baking powder and chopped chives in a large bowl. Next, whisk together the eggs, melted butter, milk and mustard. Season well with salt and pepper and pour into the flour mixture. Add in ¾ of the grated cheese and stir until the mixture just comes together (DO NOT OVER MIX) Spoon into a 12 hole muffin tin lined with papers. Place half a slice of prosciutto into each muffin, top with the remaining cheese and sprinkle over the seeds. Bake in the oven at 180`f for 18-20 minutes. These can be served either hot or cold.
