Oriental style summer rice salad

Ingredients
For the salad
150g Basmati rice, rinsed and cooked (Eurico)
3 Spring onions, sliced
1 Packet baby sweetcorn, grilled and sliced
2 Red peppers, roasted and sliced
100g Frozen soya edamame beans, cooked (Orogel)
1 large Carrot, peeled and sliced into ribbons
1 tbsp Toasted sesame seeds (Lamb brand)
1 tbsp Fresh coriander leaves
For the dressing
2 tbsp Honey
2 tbsp Soy sauce (Tiger tiger)
1 tsp Grated fresh ginger
1 Small red chilli, finely chopped
1 tbsp Rice wine
1 tbsp Olive oil (Borges)
1 tsp Sesame oil (Tiger tiger)
1 tsp Mince garlic (Tiger tiger)
Method
This is a very easy recipe to prepare. For the dressing, just place all the ingredients together in a small saucepan and heat together to dissolve. Meanwhile, mix together all of the salad ingredients, pour over the dressing and mix together well. Chill before serving.
