Rich chocolate mousse with raspberries

Ingredients
- 3 tbsp water
- 40g caster sugar (Lamb brand)
- 3 egg yolks (Le Naturelle)
- 2 x 270ml tubs double cream (Elmlea)
- 300g melted dark chocolate (Novi)
- 1 box fresh raspberries
- Edible leaves or flowers to decorate

Method
Start this recipe by heating together the sugar and water for a few minutes over the heat to dissolve the sugar and make a syrup. Beat the egg yolks in a large bowl till pale then whisk in the hot sugar syrup. Next, pour in 120 ml double cream and whisk through. Pour the mixture back into the saucepan and heat gently till slightly thickened. Pour this mixture over the melted chocolate and mix together well. Finally, whip the remaining 420ml double cream and fold into the chocolate mixture. Spoon into glasses or a tart base and allow to set in the fridge. Decorate the top with fresh raspberries, leaves and edible flowers.
