Ice-cream filled choux with berries dessert fruit

Ingredients

  • Large choux buns (homemade or shop bought)
  • 1 tub vanilla ice-cream (Carte D’or)
  • 1 tbsp icing sugar for dusting (Lamb brand)
  • Fresh berries and mint leaves
  • Raspberry or chocolate sauce for serving

Method

Cut your choux buns in half and fill with a large scoop of vanilla ice-cream and fresh berries. Place on the top and dust with icing sugar. Decorate a plate with raspberry or chocolate sauce, place the filled choux bun on top and decorate the side with a few berries and mint leaves.
