Chilli, cinnamon and coffee infused pork spare ribs

Ingredients

  • 2 shots espresso (Nescafe Dolce Gusto)
  • 1 full rack of ribs
  • 1 tbsp. ground cinnamon
  • 1 tsp mixed spice
  • 1 tbsp. smoked paprika
  • 6 tbsp. oyster sauce
  • 5 tbsp. brown sugar (Lamb brand)
  • Small bunch coriander, chopped
  • ½ tsp chili flakes
  • 1 tsp sesame seeds
  • 1 rack pork ribs (approx. 10 ribs)

Method

Cut the pork ribs in 10 pieces and marinade overnight with the espresso. Mix together the cinnamon, paprika, chili, sugar and mixed spice and rub into the ribs. Brush with the oyster sauce and grill in a preheated oven until cooked through. Serve sprinkled with the coriander and sesame seeds.
