Pork Bites with figs and a blue cheese crust

Ingredients
- 300g pork fillet
- 8 dried figs, cut in half
- 1 cinnamon stick
- 2 star anise
- 2 tbsp. brown sugar (Lamb brand)
- 2 cups water
- 80g blue cheese (Emborg)
- 6 walnuts (Lamb brand)
- 30g butter, melted (Valio)
- 4 slices French toast
- 12 fancy sticks
Method
Cut the pork in 12 even pieces and season with salt and pepper. Sauté pan. Meanwhile, heat a pan with 1 tbsp. oil and seal the pork on both sides. Place the cinnamon, star anise, brown sugar, figs and water together in a saucepan, bring to the boil then simmer for 30 minutes. In a food processor, blend together the French toast, walnuts add blue cheese in the melted butter and season with salt and pepper. Remove the star anise and cinnamon from the saucepan, place into a processor with the figs and blend into a jam. Place some fig jam on the pork pieces, cover with the blue cheese crust and finish off in the oven until the crust is browned. Insert a stick or serve on a spoon warm and serve.
