Cream cheese lemon mousse pots with berries
Serves: 6
Ingredients
For the biscuit base
- 100g ginger biscuits, crushed
- 50g melted butter
For the lemon mousse
- Juice of a large lemon
- Yellow food colouring
- 2 gelatin leaves, soaked
- 200ml whipping cream
- 2 tbsp icing sugar
- 200g cream cheese
- 150g lemon curd
- Finely grated zest of a lemon
- Fresh berries to decorate
Method
Start this recipe by mixing together the melted butter and crushed biscuits and spoon into the base of your mason jars. Next, heat together the lemon juice and soaked gelatin leaves to dissolve and then mix in a few drops yellow colouring. In a bowl, mix together the cream cheese, lemon curd and lemon zest. In another bowl, whip together the cream and 2 tbsp icing sugar to soft peaks. Fold the cream into the cream cheese mixture, then very quickly fold in the dissolved gelatin mixture. Quickly pipe the mixture into the jars and place in the fridge to set for an hour. Serve decorated with berries.
