Risotto Porcini
Serves: 2
Ingredients
- 150g risotto rice
- 100g dried porcini ( soaked in water for 1hr )
- 500ml beef Stock
- 100g Parmesan
- 1 small onion, finely chopped
- 4 tbsp olive oil
- 50g butter
- 100ml beef Jus
- 100ml white wine
- Salt and Pepper
Method
Saute onion. Add rice. Reduce white wine. Gradually add Beef stock. Add porcini. Finish off with beef Jus, Parmesan and butter.
