Wild boar fillet with glazed apples thyme potatoes and asparagus bundles

Serves: 2

Ingredients

  • 500g wild boar fillet
  • 1 red apple
  • 1 tbsp honey
  • 1/2 glass red wine
  • 1 large potato
  • 1 tbsp cornflower (Lamb Brand)
  • 1 tsp thyme leaves
  • 100g cheddar cheese grated
  • 6 large asparagus
  • 2 slices streaky bacon
  • Bunch baby rocket leaves

Method

On a preheated pan saute the whole fillet from all sides, meanwhile quarter the apples and saute with the fillet. Remove the fillet and add the honey, caramelize remove the apples and pour in the wine. Simmer until sauce is thick enough. Grate the potatoes and mix with the thyme, cheese and cornflower, form flat patties and sauté or roast on a baking tray. Blanch the asparagus wrap 2 bundles with 3 asparagus each in bacon, cover the asparagus with silver foil leaving the bacon uncovered and grill until browned. Finish the fillet in the oven allow to rest and carve to serve on the apples and potato cakes
