Beer battered fish goujons with a chilli prawn and spinach salad

Serves: 2

Ingredients

For the fish

  • 300g grouper fillet
  • 2 eggs
  • 1/4 glass beer
  • 1 tsp chopped parsley
  • 100g flour

You will also need

  • 1 fresh chilli
  • 200g cocktail prawns
  • 1 lime
  • 3 spring onion
  • Bunch spinach leaves
  • 3 tbsp cashew nuts
  • Handful mint leaves
  • 1/2 mango
  • 1/2 avocado
  • 3 tbsp extra virgin olive oil

Method

Beat the eggs and whisk in the flour, add the parsley and incorporate slowly the beer with the whisk. Cut the fish in strips, season well and dust with flour. Dip the fish goujons in the batter and than in hot oil until crispy. Chop the chilly and spring onion to mix in a bowl with the nuts, mint and spinach leaves. Zest lime and squeeze the juice to add them to the bowl, dice the mango and avocado and toss all together with the olive oil.
