Pork and mushroom skewers

Serves:

Ingredients

  • 12 medium sized mushrooms
  • 100g lemon couscous (Sammy`s)
  • 50g cream cheese
  • 1 Maltese sausage
  • 1 tbsp crushed pistachios
  • 1 tbsp breadcrumbs
  • 100g veal mince
  • 1 tbsp Branston pickle
  • 1 tbsp French mustard
  • 4 tbsp Cranberry sauce
  • 12 fancy kebab sticks

Method

Remove the stalks from the mushrooms, mix the cooked couscous with the cream cheese and fill the mushrooms, sprinkle the top with pistachios and breadcrumbs than put under the grill. Mix well the Maltese sausage meat, veal, pickles and mustard and form small patties, cook in oven at 180`c. In a saucepan add same amount water to cranberry sauce and dilute to a smooth sauce. Drizzle the sauce on the plate place the mushrooms topped with the patties on stick.
