Tatin of peperoni with spicy beef
Ingredients
- 2 jars grilled peperoni pieces (Ponti)
- 2 large onions, peeled and sliced
- 500g minced beef
- 2 tsp ground mixed spices (cumin, cardamom, coriander, chilli)
- 2 tbsp butter
- 2 tbsp light brown sugar
- Few thyme springs
- Puff pastry
- Salad leaves
Method
Melt the butter in a frying pan, add the sugar and cook until slightly caramelised. Divide the mixture into 6 ramekins. Cover the caramel with the bell peppers Cook the sliced onion in a knob of butter until soft. Add the spiced, cook for 1 minute and stir in the beef. Cook the meat filling through. Divide the mince over the bell peppers and cover with discs of puff pastry. Bake in a hot oven until pastry is cooked. Take out of the oven and overlap carefully. Serve warm accompanied with a side salad.
