Apple bread pudding

Ingredients

For the pudding

  • 6 slices French slice, crusts removes and diced (Golden Harvest)
  • 100g brown sugar
  • 70g butter
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 3 peeled, cored and sliced apples
  • 3 tbsp sultanas

For the custard

  • 1 tin evaporated milk
  • 1 tbsp sugar
  • 70g melted butter
  • 2 eggs, beaten
  • Zest of a lemon
  • 1 tsp vanilla essence

Method

Place the bread cubes in a dish and bake in the oven for a few minutes to toast slightly. Meanwhile, place the sugar, butter and spices in a pan and melt together. Lay the apples slices on the base of an oven-proof dish and sprinkle over the sultanas. Pour over the melted butter mixture. Make the custard by mixing all the ingredients together. Add in the toasted bread pieces and then pour everything over the apples. Bake in the oven for 25 minutes at 180`c. You can serve the apple bread pudding warm or cold
