Meat loaf

Ingredients

  • 500g minced beef
  • 500g minced pork
  • 200g Maltese sausage
  • 1 onion finely chopped
  • 12 rashers of bacon
  • 2 tsp garlic
  • 2 tsp fennel seeds
  • 2 tbsp chopped parsley
  • 4 boiled eggs
  • 4 eggs
  • 100g breadcrumbs
  • 50g grated Parmesan
  • Salt and pepper

Method

Set aside the hard boiled eggs and bacon. Mix all the other ingredients thoroughly until all ingredients combine. Lay the bacon on a piece of wide opened foil, spoon half of the mix, add the hardboiled eggs, and spoon the remainder. Roll the foil in order to form large sausage, twisting the edges. This will require several layers of foil. Fill a dish with 3cm of water, place the loaf and bake for 1 ½ hours.
