Pork fillet with orange and prune crust

Ingredients

  • 1 pork fillet
  • 50g prunes
  • 50g breadcrumbs
  • 1 knob butter
  • 1 orange peel
  • 50g whole grain mustard

Method

Preheat a pan and seal the pork fillet from all sides ,remove from heat and brush the top with the mustard. Meanwhile, prepare the crust. Finely chop the orange peel and mix with the ground breadcrumbs. Add in the melted butter and the finely chopped prunes and use to cover the top of the fillet. Cook in oven for 15 minutes and serve.
