Leek and potato soup

Serves:

Ingredients

  • 220g potatoes
  • 200g leeks
  • 200g onions
  • 50g celery
  • 1 ltr vegetable stock
  • 100ml fresh cream

Method

Start by dicing the onions ,leeks and celery , Preheat pan shallow fry the vegetables for 3 minutes with a knob of butter, then add the peeled ,wedge cut potatoes and cook for a further 4 minutes. Gradually add the vegetable stock and simmer for 15 minutes to cook the potatoes. Blitz together with the cream and serve .
