Beef Wellington

Ingredients

  • 200g beef fillet
  • 1 Portobello mushroom, chopped
  • 50g liver pate
  • 100g puff pastry
  • 1 onion, chopped
  • 1 clove garlic, chopped

Method

Preheat a pan and shallow fry the onions, garlic and mushrooms together with a knob of butter and cook till the mushroom softens. Remove off the heat and blitz for 3 seconds. In a separate pan seal the beef on all sides for 4 minutes, remove from heat and place on a tray. Spoon the mushroom mixture on top with the liver pate. Cover completely with the puff pastry like a parcel and bake for 8 minutes in oven till cooked through.
