Braised lamb shank with tomatoes and mint
Serves: 1
Ingredients
- 1 lamb shank
- 100ml red wine
- 10ml tomato sauce
- 100 ml vegetable stock
- 1 carrot
- 1 onion
- 2 cloves garlic
- 20g peas
- Fresh mint
Method
Preheat a deep, thick bottomed pan and seal the lamb from all sides. Place in a deep casserole dish and put aside. Meanwhile cook the carrots, onions and garlic in the same pan. Add the red wine and vegetable stock and reduce for 5 minutes. Pour over the lamb with the tomato sauce. Cook in oven for 40 minutes at 160`c, adding the peas in the last 3 minutes of the cooking time.
