Baked cerna with basil and nut crust

Serves:

Ingredients

  • 200g cerna, filleted
  • Fresh basil
  • 10g nuts
  • Breadcrumbs
  • 50g butter
  • Pinch saffron
  • 100ml fish stock
  • White wine
  • 1 onion
  • 1 clove garlic

Method

In a glass bowl, mix together the melted butter, breadcrumbs, basil and nuts. Use to cover the filleted cernia with a crust and bake for 20-25 minutes in an oven at 160`c. For the sauce, cook the onions and garlic for 2 minutes then add the white wine. Reduce by half, than add the fish stock. Reduce again and finally add a touch of cream and saffron and cook till you get the correct consistency.
