Whitebait patties

Ingredients

  • 50g whitebait
  • 10g anchovy fillets
  • 20g flour
  • 1 egg
  • 10g boiled potatoes
  • Fresh seasoning
  • Chopped garlic
  • Chopped onion

 

Method

Pan-fry the finely chopped onions and garlic in some oil, then add the boiled potatoes cook for 2 minutes. Crush the mixture together using a fork and allow to cool down. Add the egg, flour, anchovy and whitebait and mix together well. In a hot frying pan, cook spoonfuls of the mixture at a time until golden brown on both sides.
