Smoked salmon and cream cheese frittata

Ingredients

  • 6 eggs
  • 2 tbsp snipped chives
  • 1 tbsp chopped basil leaves
  • Fresh seasoning
  • 1 tbsp olive oil (PREGO)
  • 50g cream cheese
  • 70g smoked salmon, finely chopped
  • Salad leaves and sliced red onion to serve

Method

Start this recipe by heating the grill of your oven, and also heating the olive oil in a non-stick frying pan. Meanwhile, quickly whisk together the eggs and fresh herbs in a bowl and season well with salt and pepper. Pour this mixture into the heated pan and spread out. Sprinkle over the cream cheese and cook till the egg is almost cooked. Sprinkle over the smoked salmon and place the pan under the hot grill for a couple of minutes to cook the frittata on top. When ready, remove the pan from under the grill and allow to cool for a couple of minutes. Cut the frittata into six pieces and serve with a few salad leaves and topped with some red onion slices and a little more freshly ground black pepper.   • 6 bajdiet;
  • 2 mgħaref kurrat, imqatta’;
  • mgħarfa weraq tal-ħabaq, imqatta’;
  • ħwawar friski;
  • mgħarfa żejt taż-żebbuġa (PREGO);
  • 50g ġobon artab;
  • 70g salamun iffumigat, imqatta’ rqiq;
  • weraq tal-insalata u basal aħmar imqatta’ roti biex isservi

Method

Saħħan il-grilja tal-forn. Saħħan ukoll iż-żejt taż-żebbuġa f’taġen kbir. Imbagħad fi skutella ħabbat il-bajd u l-ħwawar friski u żid il-bżar u l-melħ. Itfa’ din it-taħlita fit-taġen u ferrixha. Imbagħad itfa’ l-ġobon artab fil-wiċċ u sajjar sakemm il-bajd ikun kważi sar. Fl-aħħar poġġi l-biċċiet tas-salamun fil-wiċċ u daħħal it-taġen taħt grilja taħraq għal ftit minuti, sakemm jiħmar il-wiċċ. Neħħiha minn taħt il-grilja u ħalliha tiksaħ. Qattagħha f’sitt biċċiet u serviha bi ftit weraq tal-insalata. Itfa’ ftit basal imqatta’ u bżar iswed mitħun fil-wiċċ.
