Savoury scones with salmon, dill and chives

Ingredients

  • 300g self raising flour
  • 1/4 tsp salt
  • 1/2 tsp chopped fresh dill
  • 1/2 tsp chopped fresh chives
  • 60g butter or margarine
  • 1 spring onion, finely chopped
  • 3 slices smoked salmon, finely chopped
  • 150ml milk
  • A little extra milk for glazing
  • cream cheese for serving

Method

Heat oven to 220`c and lightly grease and flour a baking tray. Sift flour and salt together in a mixing bowl. Cut the butter into small pieces and add to flour mixture. Next, rub the butter into the flour with fingertips until the mixture resembles fine breadcrumbs. Stir in the smoked salmon, spring onion, chopped dill and chives before finally adding in the milk gradually, stirring well with a knife until the mixture begins to stick together and forms a soft smooth dough. Turn the scone dough out onto a floured surface and flatten or roll the dough to about 3cm thick round. Use a 5cm round cutter to cut out individual round scones and place on the greased baking tray. Brush the top of the scones with a little milk. Cook the scones in the oven at 220`c for about 10-15 minutes or until golden brown. When ready, remove the scones from the oven and allow to cool completely on a wire rack. To serve, cut the scones through the middle and fill with the cream cheese.

Scones tas-salamun, xibt u kurrat

Ingredients

  • 300g dqiq self raising;
  • ¼ ta’ kuċċarina melħ;
  • ½ kuċċarina xibt frisk, imqatta’;
  • ½ kuċċarina kurrat frisk, imqatta’;
  • 60g butir jew marġerina;
  • spring onion, imqattgħa rqiq;
  • 3 biċċiet salamun iffumigat, imqatta’ rqiq;
  • 150ml ħalib; ftit ħalib ieħor għall-wiċċ;
  • ġobon artab biex isservi

Method

Saħħan il-forn għal 220oC. Idlek dixx u iksih bid-dqiq. Fi skutella, għarbel id-dqiq u l-melħ. Qatta’ l-butir f’biċċiet żgħar u żidu mat-taħlita tad-dqiq. Imbagħad daħħlu fit-taħlita bil-ponot ta’ subgħajk sakemm it-taħlita tiġi qisha frak tal-ħobż fin. Żid is-salamun iffumigat, il-basla, ix-xibt u l-kurrat imqattgħin, imbagħad żid il-ħalib ftit ftit. Ħawwad sew b’sikkina sakemm it-taħlita tagħqad flimkien u tifforma għaġina ratba. Poġġi din l-għaġina fuq wiċċ miksi bid-dqiq u iftaħha fi ħxuna ta’ madwar 3ċm. Uża forma tonda ta’ 5ċm biex taqtagħhom fi ċrieki u poġġihom fid-dixx. Idlek il-wiċċ tal-iscones bil-ħalib u aħmihom f’temperatura ta’ 220oC għal madwar 10 minuti-kwarta, jew sakemm jiħmaru. Meta jkunu lesti, oħroġhom mill-forn u ħallihom jiksħu fuq gradilja. Biex isservi, aqsam l-iscones min-nofs u imlihom bil-ġobon artab.
