Vegetarian pink hummus crackers with avocado, grapes and walnuts

Ingredients

For the pink hummus
  • 1 tub ready made hummus (Camel)
  • 1/4 cooked beetroot
  • 2 tbsp Greek yogurt
  • 1 tbsp tahini paste
  • 1 tsp ground cumin
You will also need
  • 1 packet crackers (Tesco)
  • 1 ripe avocado
  • Squeeze lemon juice
  • 12 black grapes, halved
  • 24 walnut halves

Method

To make the pink hummus, just blitz together all the ingredients till smooth. Place into the fridge and chill for an hour before using. Lay out the crackers onto your serving tray and either spoon or pipe the hummus into the center. Top each with a slice of avocado drizzled with lemon juice to stop browning, a grape and a walnut half.
