Gluten free pasta with pumpkin, anchovies and mascarpone cheese

Ingredients

  • 300g gluten free fusilli pasta (Dr. Schar)
  • 100g anchovies
  • 150g diced pumpkin
  • 2 tbsp roasted almonds (Good Earth)
  • 3 cloves garlic
  • 1 shallot
  • small bunch basil leaves
  • 2 tbsp parmesan cheese
  • 6 tbsp olive oil (Borges)

Method

Dice the pumpkin and chop the garlic and shallot, sauté until softened tossing continuously. Meanwhile blend well into a pesto the almonds, basil, Parmesan and olive oil. Boil the pasta and toss with the sautéed pumpkin, add the pesto, mascarpone and keep tossing.
