Frozen key lime ice-cream pie

Ingredients

For the biscuit base

  • 400-450g ginger biscuits, crushed (Tesco)
  • 160g melted butter (President)
  • 1 tbsp caster sugar

For the filling

  • 1 jar lemon or lime curd (Tesco)
  • Juice and zest of 4 limes
  • Drop green food colouring
  • 1 tub vanilla ice-cream (Carte D`or)
For the topping
  • 250ml fresh cream (Benna)
  • 1 tbsp icing sugar
  • 1 tsp vanilla
  • Grated lime slices and zest to decorate
  • 12 blackberries

Method

Start this recipe by mixing together the melted butter, biscuits and sugar and press into a non-stick spring form cake tin on both the base and sides. Bake in the oven at 180`c for 8 minutes. Remove from the oven and allow to cool. Next, place the ice-cream in the bowl of a food mixer and soften. Quickly add in the lime curd, lime juice and zest and a drop of green food colour and mix together well. Pour the mixture over the prepared biscuit base and freeze for 5 hours or overnight. When ready to serve, whip the fresh cream with the sugar and vanilla to soft peaks. Place the frozen pie onto a serving plate and spoon over the whipped cream. Decorate the top with the lime zest, lime slices and blackberries.

  • 2 pakketti ta’200g gallettini tal-ħafur, imfarrka
  • 225g butir imdewweb
  • mgħarfa zokkor

Għall-mili

  • vażett ‘lime curd’
  • meraq u qoxra ta’ luminċell
  • ftit qtar kulur tal-ikel aħdar
  • kaxxa ġelat tal-vanilla

Għall-wiċċ

  • 500ml krema friska
  • mgħarfa zokkor fin
  • kuċċarina vanilla
  • biċċiet ta’ luminċell maħkuk u qxur tal-luminċell għad-dekorazzjoni
  • 12-il tuta

Method

Ibda din ir-riċetta billi tħallat flimkien il-butir imdewweb, gallettini u zokkor u agħfas ġo landa tal-kejk li jinqala’ kemm il-qiegħ kif ukoll il-ġnub. Aħmi fil-forn f’temperatura ta’ 180°C għal 8 minuti. Neħħi mill-forn u ħalliha tibred. Sussegwentement, poġġi l-ġelat fil-bowl tal-mixer u rattab. Żid malajr il-lime curd, meraq tal-luminċell u l-qoxra, kif ukoll qatra ta’ kulur aħdar ta’ l-ikel u ħawwad flimkien sew. Ferra t-taħlita fuq il-bażi tal-gallettini ppreparata u ffriża għal 5 sigħat jew matul il-lejl. Meta tkun lest biex isservi, tella’ l-krema friska maz-zokkor u l-vanilla. Poġġi t-torta ffriżata fuq platt biex isservi u poġġi fil-wiċċ il-krema. Iddekora l-wiċċ bil-qxur tal-luminċell, biċċiet tal-luminċellġir u tut.
