Chicken pesto skewers with Italian-style couscous salad

Ingredients

For the skewers

  • 2 chicken breasts cut into cubes
  • 2 tbsp green pesto (Camel Brand)
  • Salt and pepper for seasoning
  • Wooden skewers, soaked in water

You will also need

  • 2 packets flavoured couscous (Tesco)
  • Good drizzle olive oil (Borges)
  • Handful sundried tomatoes, sliced (Camel Brand)
  • 1 bag mini mozzarella balls (Benna)
  • Handfull rocket leaves
  • Fresh basil leaves, chopped
  • 1 tbsp toasted pine nuts

Method

This is an extremely easy recipe to prepare. Start by threading the chicken pieces onto soaked wooden skewers. Cook on a griddle pan for 3 minutes on each side until cooked through. Meanwhile, make up the couscous with hot water and allow to sit for 4 minutes covered. When ready, stir in all the remaining ingredients. Serve the pesto chicken skewers with the Italian-style couscous.
