Chicken pesto skewers with Italian-style couscous salad

Ingredients
For the skewers
- 2 chicken breasts cut into cubes
- 2 tbsp green pesto (Camel Brand)
- Salt and pepper for seasoning
- Wooden skewers, soaked in water
You will also need
- 2 packets flavoured couscous (Tesco)
- Good drizzle olive oil (Borges)
- Handful sundried tomatoes, sliced (Camel Brand)
- 1 bag mini mozzarella balls (Benna)
- Handfull rocket leaves
- Fresh basil leaves, chopped
- 1 tbsp toasted pine nuts
Method
This is an extremely easy recipe to prepare. Start by threading the chicken pieces onto soaked wooden skewers. Cook on a griddle pan for 3 minutes on each side until cooked through. Meanwhile, make up the couscous with hot water and allow to sit for 4 minutes covered. When ready, stir in all the remaining ingredients. Serve the pesto chicken skewers with the Italian-style couscous.
