Chicken, ġbejna and salami skewers with aubergine salad and honey and yogurt dip

Ingredients

For the skewers

  • 6 thin chicken slices
  • Mayonnaise
  • 6 slices Salami Spianata
  • 2 Gbejniet (Benna)
  • 1 red bell pepper
  • 2 mushrooms
  • Oregano
  • Extra virgin olive oil (Borges)
  • 1 orange

For the aubergine

  • 1 aubergine
  • 1 sliced onion
  • Rosemary springs
  • 2 cloves garlic
  • Extra virgin olive oil (Borges)
  • Balsamic vinegar (Borges)

For the dip

  • 6 tbsp Greek yogurt (Mevgal)
  • 1 spoon honey
  • 2 garlic cloves finely chopped
  • Chopped parsley

Method

Put the chicken slices onto a flat surface and flatten gently with a meat basher. Brush with the mayonnaise, put a slice of spicy salami on top and a wedge of ġbejna and roll. Push a chicken roll onto a skewer, next add a slice of bell pepper, repeat again with chicken, mushrooms and chicken. Season with salt & pepper, sprinkle with the oregano, squeeze the orange on top and drizzle with olive oil. Bake or grill as desired. Peel the aubergine, cut the flesh into cubes and put in an oven proof dish. Mix and season with the remaining ingredients, cover with aluminium foil and bake until soft, approx. 15 minutes. To make the yogurt dip, simply whizz all the ingredients together.
