Sun dried tomato brushed salmon on a feta and French bean salad

Ingredients

  • 2 x 180g salmon fillets
  • 4 sun dried tomatoes (Camel Brand)
  • 4 tbsp olive oil (Borges)
  • 80g feta cheese
  • 100g French beans
  • 1 shallot
  • 1 tsp sesame seeds
  • 6 cherry tomatoes
  • 6 Kalamata olives
  • 6 king prawns
  • 1 tbsp garlic oil (Borges)

Method

Blend well the sundries tomatoes with the olive oil, Brush the salmon with and grill in the oven. Toss the prawns on high heath in garlic oil, blanch the French beans and toss together with the seeds, sliced shallot, olives, quartered tomatoes and crushed feta. Once the salmon is cooked through brush again with the sundries tomato paste and serve on the salad.
