Beef and duck skewers on a grilled aubergine and tomato gratin

Method
Remove the extra fat off the duck and cut in cubes, cut the fillet same shape and size toss with the honey, spice and hoisin and put on four sticks alternatively. Grill on a well preheated grill until medium cooked. Slice and Grill the aubergines, meanwhile slice also the tomatoes and layer on a baking tray alternatively with the goat cheese in the middle. Layer 3 slices of each with the goat cheese at the top and grill until golden. Finely chop the chilli and basil and mix well with the yogurt, season and serve on the side.

- bżaru aħmar żgħir
- mazz żgħir weraq tar-‘rocket’
