Baked Panettone pudding

Ingredients

  • 750g panettone
  • 50g (2oz) dark chocolate chips
  • 750g ready-made custard
  • 150ml fresh cream (Benna)
  • Zest of 2 oranges
  • 2 tbsp demerara sugar
  • Pouring cream or chocolate sauce to serve

Method

Preheat the oven to 160`c. Cut the panettone horizontally into 2.5cm (1inch) slices to create rounds, then cut these in half. Arrange in a 2-litre ovenproof dish. Scatter over most of the chocolate chips. In a small pan, heat the custard, cream and orange zest until warm. Pour over the panettone, press down lightly to immerse slices completely and leave to soak for 20 minutes. Scatter over the remaining chocolate chips, followed by the sugar. Bake in the oven at 160`c for 30-35min until golden and custard is just set. Serve immediately with the pouring cream or chocolate sauce.
