Lebkuchen Christmas biscuits

Ingredients
- 85g honey
- 115g dark brown sugar
- 30g butter
- 225g plain flour
- ½ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp bicarbonate of soda
- 1 beaten egg
- 50g ground almonds
- You will also need melted chocolate and icing sugar to decorate
Method
In a pan, melt together the honey, sugar and butter then remove off the heat. Sift together the flour, spices and bicarbonate of soda. Add half to the butter mixture, then stir in half of the beaten egg. Repeat the process with the remaining flour mixture and beaten egg. Finally, stir in the ground almonds. Place the sticky mixture into a bag and chill for 2-3 hours to harden up. When ready, roll out the mixture between 2 sheets of non-stick baking paper and cut out using star and round cutters. Bake in a preheated oven at 180`c for 8-10 minutes only. Meanwhile, mix the icing with a little hot water to make a runny glaze. As soon as the biscuits come out of the oven, brush with the glaze and allow to dry or dip in melted chocolate when cooled down. Both options of decorating are used for the Lebkuchen Christmas biscuits.
