Stuffed marrows with ricotta

Ingredients
For the marrows
- 4 round marrows
- 1 finely chopped onion
- 2 tomatoes
- 2 eggs
- 400g ricotta cheese (Benna)
- 1 small packet galletti
- 4 spoons grated low fat cheese
- 1 spoon finely chopped parsley
- Fresh seasoning
- 1 calorie low fat spray (Fry light)
You will also need
- 3 potatoes peeled and thinly sliced
- 2 cloves garlic
- 1 large onion
- 1 spoon extra virgin olive oil (Borges)
- 1 spoon fennel seeds
- Crushed black pepper
Method
Wash the marrows, cut the top and hollow the flesh with a spoon. Chop the flesh and the tomatoes. Spray a non stick pan with the spray and cook them together with the onion. Mix the ricotta with the obtained filling, eggs, cheese, parsley and crushed galletti, season with salt and pepper. Fill in the marrows. Put the potatoes, garlic and the onions in an oven dish, season with the pepper and fennel seeds. Place the marrows on top of the potatoes, drizzle with extra virgin olive, add some water to the dish and bake for 35 minutes approximately.
