Creamy pasta octopus with lime zest and fresh basil
Serves: 2
Ingredients
- 300g pasta
- 200g fresh octopus
- 1 small leek
- 1 tsp lime zest
- 1 tbsp chopped basil
- 2 cloves garlic
- 1 cup fresh cream (Benna)
- 1 small chilli
- 1 tsp ground coconut
- 1 glass white wine
- 1 knob butter (President)
Method
Chop the leek, garlic, chilli and sauté in butter on low heat. Slice the cooked octopus and toss in, add also the zest and coconut stirring continuously. Increase the heat and add the wine, bring to the boil than pour in the cream and reduce by half. Add the cooked pasta and basil, toss and season.
