Ricotta and sweet corn fritters with smoked salmon
Serves: 2-3
Ingredients
For the fritters
- 100g plain flour
- 120ml milk
- 2 eggs
- 115g ricotta, crumbled with a fork
- 1 x 400g tin sweet corn, drained
- 2 spring onions, finely sliced
- Fresh seasoning
You will also need
- 100g smoked salmon
- Few salad leaves
- ½ avocado
- Lemon wedges
Method
To prepare this recipe, place the flour into a bowl and whisk in the milk and eggs till smooth. Next, using a spoon mix in the ricotta, spring onions, sweet corn and season to taste with pepper and salt. Heat a large non-stick frying pan with a little oil and fry spoonfuls of the mixture on both sides for 2 minutes or so, or until golden brown. To serve, stack 3 fritters on top of each other per serving, top with a few slices of avocado, sliced smoked salmon and finish off with a few salad leaves.
