Zucchini fritters with roasted garlic and chive yogurt

Ingredients

For the fritters

  • 600g broccoli, finely chopped or grated
  • 5 eggs (Le Naturelle)
  • 3 cloves garlic, finely chopped
  • 3 spring onions, finely sliced
  • 150g grated low-fat cheese (Fior di Vita Baronesse)
  • 60g chickpea flour
  • 1 tsp baking powder
  • 100g cashew nuts, chopped (Lamb brand)
  • 4 tbsp. chopped fresh herbs (mint + basil)
  • Salt and pepper
  • Olive oil for frying (Borges)

You will also need

  • 150ml low-fat Greek yogurt (Kolios)
  • 1 bulb garlic
  • 2 tbsp. chopped fresh chives
  • 1 tsp finely grated lemon zest

Method

Cut the top off the garlic bulb, drizzle with olive oil and wrap in foil. Bake in the oven for 20-25 minutes. Meanwhile, mix all of the fritter ingredients together and season well with salt and pepper. Heat a little olive oil in a large pan and fry scoops of the broccoli mixture on both sides for 3-4 minutes. Meanwhile, make the yogurt dip. Remove the roasted garlic bulb out of the foil and squeeze the puree into a bowl. Add in the low fat Greek yogurt, chopped chives and lemon zest and season with salt and pepper. Serve into small bowls with the broccoli fritters and dress with extra fresh herbs.
