Zucchini and feta chicken meatballs with pickled cucumber and sun dried tomato hummus

Ingredients
For the chicken balls
400g chicken mince
1 zucchini, grated and squeezed
150g feta cheese with herbs, crumbled (Camel Brand)
½ onion, finely chopped
2 cloves garlic, finely chopped
2 tbsp chopped fresh dill
Salt and pepper
1 egg, beaten
Breadcrumbs to bind (Lamb brand)
2-3 tbsp olive oil for frying (Borges)
For the pickled cucumber
1 small cucumber, sliced into ribbons
1 tbsp sugar
2 tbsp white vinegar
Juice and zest 1 lime
1 tsp chilli flakes
You will also need
3 tbsp hummus with sun dried tomatoes (Camel Brand)
Cooked plain rice for serving (Lamb brand)
Method
Start by making the pickled cucumber. Mix all the ingredients together and place in the fridge for at least 1 hour. Meanwhile, make the chicken meatballs by mixing together the chicken mince, zucchini, feta, garlic, onion and chopped dill. Season with salt and pepper and mix in the egg and enough breadcrumbs to firm up the mince. Form into balls and fry in a pan with olive oil. When ready, serve the chicken meatballs on a bed of cooked rice with the pickled cucumber on the side and a dollop of the hummus with sun dried tomatoes on top.
