Aubergine pizza

Ingredients

1 large aubergine, cut into 2cm thick slices
2-3 tbsp olive oil (Borges)
Salt and pepper to season
1 tsp oregano
200g tomato salsa or pizza sauce (Carina)
10 cherry tomatoes, halved
2 balls fresh mozzarella di buffola
60g grated Parmesan
Fresh basil leaves for serving

Method

Start by seasoning the aubergine slices with salt and pepper and oregano and pan-fry on both sides to brown. Place on a baking tray and cook for 15-20 minutes. Top with the salsa or pizza sauce, cherry tomatoes, sliced mozzarella and finish off with some grated Parmesan and a drizzle of olive oil. Place under a hot grill for 5 minutes. To serve, place the aubergine pizzas onto a large wooden platter and decorate with fresh basil leaves and extra grated parmesan
