Winter spiced apple gallette with cranberries, walnuts, and figs

Ingredients
For the pastry
- 250g plain flour (Lamb brand)
- Pinch baking powder
- 2 tsp ground cinnamon
- 125g unsalted butter (Valio)
- 80g icing sugar (Lamb brand)
You will also need
- 2 apples, peeled, cored and diced
- 1 tbsp butter (Valio)
- 2 tbsp sugar (Lamb brand)
- 50g chopped walnuts (Lamb brand)
- 50g dried cranberries
- 3 dried figs, chopped
- Zest 1 orange
- 1 jar apple sauce (Colman’s)
- 1 tsp ground cinnamon
- 2 tbsp sugar (Lamb brand)
- 1 egg, beaten (Le Naturelle)

Method
Start with the pastry. Blitz together all the ingredients to a crumb then bind together with a little water. Place into the fridge and chill for 15 minutes. Meanwhile, heat the butter and sugar together in a pan and cook down the diced apples for 5-7 minutes to soften. Take off the heat and stir in the walnuts, figs, cranberries, orange zest and apple sauce. Roll out the pastry into a large round and brush the edges with beaten egg. Spoon the apple filling into the middle and fold in the excess pastry. Cut out some cookies for the top using Christmas cutters and place into the middle. Glaze with the remaining egg and sprinkle over the remaining cinnamon and sugar. Bake in the oven at 200°C for 35-40 minutes. Serve either hot or cold.
