Whole meal coconut and date and loaf

Ingredients

  • 200g dates, chopped (Lamb brand)
  • 1 cup boiling water
  • 1 egg
  • 3 tbsp. oil
  • 100g brown sugar (Lamb brand)
  • 1 tsp vanilla extract
  • 130g whole meal flour (Lamb brand)
  • 65g plain flour (Lamb brand)
  • 45g oat flakes (Lamb brand)
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 100g chopped walnuts (Lamb brand)
  • 30g coconut flakes plus extra (Lamb brand)

Method

Heat the oven to 350 degrees. Place the dates and boiling water in a small bowl and let stand for 15 minutes. Place the oats into a food processor and blitz to a flour. In a medium bowl, whisk together the egg, oil, sugar and vanilla. Combine the flours, baking powder and soda, salt and cinnamon in a large bowl. Stir in the dates with their liquid, along with the egg mixture and walnuts and stir just to combine. Pour into a lightly oiled 9 x 5-inch loaf pan and bake for 50-55 minutes, until a skewer inserted in the center comes out clean.

  • bajda waħda
  • 3 imgħaref żejt
  • 100g zokkor ismar
  • kuċċarina essenza tal-vanilja
  • 130g dqiq oħxon (wholemeal)
  • 65g dqiq plain
  • 45g ħafur
  • 2 kuċċarini trab tal-ħami
  • nofs kuċċarina bikarbonat tas-soda
  • kwart ta’ kuċċarina melħ
  • kuċċarina u nofs kannella
  • 100g ġewż imqatta’
  • 30g ġewż tal-indi mfarrak

Method

Saħħan il-forn għal temperatura ta’ 350°C. Poġġi t-tamal u l-ilma jagħli fi skutella żgħira u ħallih joqgħod għal 15-il minuta. Poġġi l-ħafur fi processor tal-ikel, itħnu u ġibu qisu dqiq. Fi skutella medja, ħawwad flimkien il-bajda, iż-żejt, iz-zokkor u l-vanilja. Għaqqad id-dqiq, it-trab tal-ħami u s-soda, il-melħ u l-kannella fi skutella kbira. Ħawwad u żid it-tamal mal-likwidu tagħhom, flimkien mat-taħlita tal-bajd u l-ġewż u ħawwad biss biex tgħaqqad. Ferra’ ġo landa tal-ħobż ta’ daqs 9 x 5 pulzieri bi ftit żejt u aħmi għal 50-55 minuta, sakemm meta ddaħħal l-istikka fin-nofs toħroġ nadifa.
