Veggie spelt burritos

Serves: 4

Ingredients

  • 1 tbsp ghee
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1/8 tsp cayenne
  • ½ medium onion, chopped
  • 2 cloves garlic, minced
  • ¼ green bell pepper, chopped
  • ¼ red bell pepper, chopped
  • 1 jar sprouted soya beans
  • 100g tofu
  • 150g mushrooms
  • 1 carrot, thinly sliced
  • ½ tsp turmeric
  • ½ -1 tbsp tamari
  • 4 whole grain tortillas
  • Salsa to garnish

 

Method

Heat the ghee in a large frying pan over medium heat. Add the cumin, coriander, and cayenne, stir briefly. Add the onion and garlic to the pan and cook until soft. Add the peppers and carrot and cook until they soften. Add the tofu and sprouted beans and stir well. Sprinkle in the turmeric and mix to add colour. Finally, add the tamari and toss. Divide mixture into four equal parts. Place ¼ of the mixture in the middle of a tortilla and roll it up. Repeat with the remaining 3 tortillas. Serve warm with salsa on the side.
