Lime and strawberry cheesecake
Ingredients
- 2 boxes fresh strawberries
- 45g coconut
- 1 packet digestive biscuits
- 80g melted butter
- 600g cream cheese
- 50g fresh cream
- 80g icing sugar
- Zest and juice of a lime
- 100g strawberry Jam
- Mint leaves for garnish
- Melted chocolate for garnish
Method
In a bowl or plastic bag combine shredded coconut, digestive biscuits and crash. Melt butter and put both the biscuits and butter together and combine. Mix the cream cheese, lime zest and juice, icing sugar and cream and mix. Place mixture into a piping bag and nozzle. Melt jam in a sauce pan to brush strawberries. Wash and cut strawberries in 4 segments and set aside. Meanwhile divide the biscuits into 6 separate glasses and pipe the mixture, arrange strawberries horizontally and brush strawberries with the melted jam. Garnish with mint leaves
