Vegetarian stuffed zucchini

Ingredients
- 2 large round zucchini
- 2 potatoes (cooked and mashed)
- 100g vegetarian cheddar
- Mixture of blanched vegetables
- Cauliflower, broccoli, carrots, asparagus, mushrooms
- Fresh herbs
- 1 clove garlic, chopped
- Fresh seasoning
- Finely chopped parsley
- Tomato zalza to serve
Method
Wash the zucchini, cut in halve and scoop out the flesh, blanch in boiling salted water. Mix the mashed potatoes with the cheddar cheese and fill in the zucchini. Saute the cooked vegetables in a drop of olive oil with the garlic, herbs and parsley and season with salt and pepper. Decorate the vegetables on top of the mashed potato filled zucchini and serve with tomato sauce on the side.
