Vegan yogurt cake with ginger marmalade

Ingredients

  • 180g Flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼  teaspoon ground cinnamon
  • Pinch of salt
  • 180mls Plant based Greek yogurt  (Alpro)
  • 50mls vegetable oil
  • 1 teaspoon vanilla extract
  • 225g caster sugar
  • 50mls oats or almond milk 
  • Zest of an orange and lemon

Marmalade ingredients

  • 2 oranges
  • ½ a lemon
  • 400g caster sugar
  • 50ml water
  • ½ teaspoon fresh root ginger

Method

Cake:  Pre heat oven at 175°C. Grease a cake loaf tin with canola oil and cover with baking paper.

Sift together the flour, cinnamon and raising agents, mix in salt. Whisk together the yoghourt, oil, vanilla, sugar, milk and citrus zests.  Pour wet ingredients into dry ingredients, gently whisk into a smooth batter. Transfer into prepared cake tin and bake for approx. 45 minutes.

Marmalade: Wash oranges and lemon thoroughly.

Cut off oranges end tips and cut into 8 pieces, discard of any seeds. Whizz in a food processor until rind is chopped into small pieces. Pour into a saucepan and start cooking over moderate heat, zest the lemon and add to the oranges, squeeze in the juice. Next stir in sugar and water, bring to the boil.

Set to simmer for approximately 30 minutes. 

Pour into jars, close with lid, allow to cool down to room temperature.
