Turkey meatball puff pastry pie

Serves: 4

Ingredients

For the turkey balls

  • 1 tbsp olive oil
  • 1 stick celery, finely chopped
  • 1 large carrot, finely chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp chopped parsley
  • 2 tbsp dried breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 600g turkey mince
  • Salt and pepper
  • 1 tbsp chopped fresh thyme
  • 2 eggs, beaten
  • You will also need

  • 500g ready tomato sauce
  • 1 sheet puff pastry
  • 1 fresh mozzarella ball, chopped
  • 1 puff pastry sheet, thawed and cut into rectangles, keep chilled
  • 1 tbsp sesame seeds

Method

Start this recipe by heating up the oil in a large pan and sauté together the celery, carrots, onion and garlic for 4 minutes. Allow to cool then place into a bowl along with the parsley, Parmesan, breadcrumbs, minced turkey, chopped thyme, 1 beaten egg and season well with salt and pepper. Form into large balls and brown in a pan with a little oil for just 3 minutes. Next, grease a round oven dish with butter and spread over a few tbsp of the tomato sauce. Place the turkey balls on top, cover with the remaining sauce and sprinkle over the chopped mozzarella. Cut the puff pastry into rectangles and lay on top of the meatballs, over lapping the pastry. Glaze the top of the pastry with the remaining beaten egg, sprinkle over the sesame seeds and bake in the oven at 200`c for 30-35 minutes till golden brown. Allow to rest for 5 minutes then serve.
