Chicken and cashew nuts

Serves: 2-4

Ingredients

For the chicken

  • 1 tbsp corn flour
  • 1 egg, beaten
  • Salt and pepper
  • 500g chicken breast, sliced

You will also need

  • 2 tbsp oil
  • 1 onion, sliced
  • 1 red and yellow pepper, cut into squares
  • 2 spring onions, sliced
  • 1 tbsp Hoisin sauce
  • 2 tbsp light soy sauce
  • 100ml chicken stock
  • 3 tbsp toasted cashew nuts
  • Cooked jasmine rice for serving

Method

Mix together the corn flour, egg and season well with salt and pepper. Add in the chicken strips and coat well. Heat the oil in a pan and quickly fry the chicken pieces for 4-5 minutes until cooked through and golden. Remove from the pan and fry the sliced onions for 2 minutes. Add in the peppers and cook for 2 minutes before adding in the Hoisin sauce, soy sauce and chicken stock. Cook for a minute before adding back in the chicken pieces and cashew nuts. Heat through then serve immediately with the cooked jasmine rice.
