Trio of gluten free mozzarella in carrozza
Serves: 3
Ingredients
- 6 Gluten free panini (Dr Schar)
- 6 slices fresh mozzarella
- Basil leaves
- Anchovies
- 2 tbsp crushed sundried tomatoes
- 2 slices smoked ham
- 100g cooked mushrooms
- 2 tbsp black olive paste
- 1 slice grilled aubergine
- Gluten free flour for dusting (Dr Schar)
- 3 beaten eggs, seasoned with salt, pepper, chopped parsley
- 2 tbsp grated Parmesan cheese
- Vegetable oil for cooking
- Tomato sauce for serving
- Few salad leaves
Method
Trim off the top and bottom of your panini and slice in 2, obtaining 12 discs. Start with the preparation of the sandwiches, make 2 with mozzarella, basil and anchovy fillets, another 2 with the mozzarella, sundried tomato paste, smoked ham and mushrooms and the last 2 with mozzarella, olive paste and aubergine. Press the sandwiches firmly tight and roll through the flour. Heat about 2 cm of oil in a frying pan; dip the sandwiches in the beaten eggs and shallow fry on each side until golden brown. Remove from the oil and place on kitchen paper. Serve immediately accompanied with side of tomato sauce and salad leaves.
