Toasted tomato salad with melting gorgonzola, rocket leaves and pine nuts

Serves: 4

Ingredients

  • 6 medium large plum tomatoes cut lengthways in half
  • Olive oil for drizzling
  • 150g gorgonzola cheese
  • A large handful of rocket
  • Maldon salt
  • Black pepper

Method

Put the tomatoes halves cut side up on an oiled and seasoned baking tray. Season each with a little olive oil and place under a pre heated grill. Cook for about 5 minutes, at this point sprinkle with Gorgonzola and return to the grill. As the cheese warms it begins to melt and bubble, top with fresh rucola leaves and the simple warm salad is ready to serve.
