Sweet vanilla quinoa puddings with pomegranate and pistachios

Ingredients
For the quinoa
- 180g white quinoa seeds
- 600-700ml milk
- 230ml cream
- Finely grated zest of an orange
- 50g caster sugar
- 1 vanilla pod
You will also need
- 1 pomegranate
- 1 tbsp pistachios, coarsely chopped
- 2 tbsp Greek yogurt
- Good drizzle of honey
Method
To prepare the quinoa, place the seeds in a sieve and rinse thoroughly under water. Place into a saucepan with600ml milk, cream, orange zest, sugar and quinoa seeds from the vanilla pod and cook together on a low heat for 25-30 minutes, adding in the remaining milk only if necessary. When cooked, serve into 4 glasses. Spoon over a little Greek yogurt, drizzle over a little honey and sprinkle the pomegranate kernels and pistachios over the top.
